Grilled Kodiak Sea Scallops


4 Whole Ears of Corn
12 Scallops

For the Corn Salad:

1 Red Onion, diced
1 Red Bell Pepper, diced
1 Handful Fresh Cilantro, chopped
Fresh Squeezed Juice from 1 Lime
1/2 tsp Chili Powder


Brush ears of corn with olive oil, season with salt and pepper, throw on grill. Once corn is cooked, shave off kernels into mixing bowl with other salad ingredients. Mix well.

Brush scallops with olive oil, season with salt and pepper, then throw on grill. Once scallops have color and are no long pale/translucent, place on plate, then cover with corn salad.

Serves 4.
