Salmon Cakes



1 1/2 lbs cooked salmon (de-boned)
3/4 cup onion, minced (you can use sauteed shallots, leeks, or green onions)
1/2 cup bread crumbs (alternatives- cracker crumbs, or meal)
1 teaspoon Worcestershire sauce
1/2 teaspoon lemon juice
1/2 teaspoon fresh ground white pepper
1 egg, slightly beaten
1 teaspoon parsley, minced (fresh or dried)


Mix all ingredients together. Form into a patty, large or small. In a frying pan, put a small amount of extra virgin olive oil, medium heat. Put patties into pan and brown well on both sides.
