This week's Summertime Grilling with Stevie features Sullivan's Executive Chef Jacob Nyman, who shared his recipe for Fresh Herb Marinated Steaks and Summer Squash!

Lemon Scented Alaskan Grown Grilled Summer Squash

3 Mixed Summer Squashes
1/2 cup Extra Virgin olive Oil     
2 Lemons                              
1 tbsp Champaign Vinegar 
2 tsp Fresh Ground Pepper
2 tsp Salt, Kosher 
2 tbsp Fresh Chives


1. Cut the squash in to 4” x ½” planks
2. Place the squash in a stainless steel bowl.
3. Zest the lemons with a microplane zester and add to the squash
4. Once the lemons have been zested cut them in half and juice the lemons.
5. Strain off any seeds and add the juice to the squash.
6. Add the salt, pepper, oil and vinegar to the squash and toss to combine.
7. Add the chives and stir to incorporate

Shake off as much of the liquid as possible and place on the grill cooking for approximately 2 minutes per side. Serve warm.

 

 

 

Fresh Herb Marinated Grilled Steaks

 

 

 

1 large bunch oregano sprigs
12 3-inch sprigs English thyme
1/4 cup soy sauce
1/4 cup balsamic vinegar
1/4 cup extra-virgin olive oil
6 cloves garlic, finely chopped
1 small jalapeno pepper, seeded and coarsely chopped
1 TBSP sugar
1 tsp ground cumin
1 tsp salt
2 Lbs of great quality steaks of your choice

 

Marinating: Roughly strip the large stems from the fresh herbs. Stir all ingredients but steak together. Turn steak in marinade to coat. Cover and marinade (minimum 6 hours and maximum of 8).

 

Grilling: Remove steak and wipe off excess marinade. Grill over very high heat for 3 to 4 minutes per side. Let rest 5 minutes before serving.
